
Fleming Family Beef Shepherd's Pie
For the recent Columbus IN Keto Potluck Picnic, I used sponsor Fleming Family Beef’s ground Charolais to make a Shepherd’s Pie. It was a hit! People loved it! In fact, the Low Carb Revolution Frozen Meals version sold out the next day, to people who attended the event.
To make it keto, I layered beef mixed with peppers, mushroom, onions, and green beans with mashed cauliflower and cheddar. I baked the casserole and served it to the crowd of people. Not a bite was left.
Make this when you need a hearty dinner. It is stick to your ribs good. I suggest serving it with a fresh garden salad dressed with vinaigrette, because it will provide a nice contrast in texture and flavor.

INGREDIENTS
BEEF MIXTURE
- 1 pound Fleming Family Beef Ground Beef, thawed
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 8 ounces mushrooms, sliced
- 16 ounces green beans, chopped
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 cup beef bone broth
- Pinch xanthan gum
- 1 teaspoon rosemary
- ½ cup dry red wine
MASHED CAULIFLOWER TOPPING
- 1 pound mashed cauliflower
- 2 tablespoons butter
- ½ cup heavy cream
- ½ cup sour cream
- 2 cloves garlic, minced
- ½ teaspoon salt
- ½ teaspoon pepper
- 2 cups sharp cheddar
- 1 teaspoon chives, chopped
DIRECTIONS
- Preheat oven to 350F.
- In a large, deep skillet, over medium heat, melt butter and brown ground beef.
- Drain fat.
- Add onion, garlic, pepper, green beans, salt, pepper, bone broth, and xanthan gum to skillet. Simmer for 10 minutes, stirring often.
- In a medium bowl, mix together mashed cauliflower, butter, heavy cream, sour cream, garlic, salt and pepper until blended.
- In a casserole dish, place beef mixture for bottom layer.
- Spread mashed cauliflower mixture above.
- Sprinkle cheddar cheese for next layer.
- Bake uncovered for 25 minutes.
- Remove from oven and top with chopped chives.
- Serve immediately.
YIELD: 6 servings
NOTES:
- This can be easily doubled.
- Want to make in advance freeze or refrigerate prepared casserole and bake right before serving.
